Observed proposition
UK category study · study edition 1.0 · 3 August 2026
The sandwich that would not melt.
Claim examined: “If it keeps its shape, it cannot be real ice cream.”
Visible shape retention does not prove that ice crystals stayed frozen, nor that a product is fake or unsafe.
UK retailer declarations establish a market map. No named product’s identity, lawfulness, safety, nutrition or quality has been determined.

Air, viscosity, ice crystals and the partially coalesced fat network can alter drainage and collapse.
Supported by peer-reviewed dairy and food-structure research.Viral inference
“It kept its outline, therefore it did not melt and is not real food.”
Not supported. Shape is not a thermometer, composition analysis or safety test.Outside this test
“Any product using these structure agents is harmful.”
A melt test cannot assess health. Additive identity, dose, exposure and human evidence require a separate evidence receipt.Interactive mechanism · not a product test
Melt and collapse are not the same event.
Move time forward, then change the illustrative structure. A sample can warm and contain melted ice while its fat, protein, air and viscous liquid phase continue to hold its shape.
More structure-retaining: A viscous serum phase and fat network can retain liquid and resist visible collapse.
The 0–100 indices only drive this explanation. They are not percentages, predictions, measurements, safety findings or product comparisons.
What the video cannot show
Four questions need four receipts.
- 01
Temperature
Did the sample warm above its initial frozen state? Measure internal and surface temperature.
- 02
Drainage and collapse
How much liquid left the sample, and how much height or footprint remained?
- 03
Identity and label
What does the exact front panel call it, and what does the same pack declare?
- 04
Health evidence
What human evidence exists at relevant exposures? A melt test cannot answer this.
UK market watch · retailer declarations
Compare the label language before testing the melt.
These are current research leads, not HonourFood verdicts. Retailer pages can lag a reformulation; a physical front-and-back pack capture is required before any named-product conclusion.
Mainstream & value
Cookies & Cream Ice Cream Sandwich
- Retail source
- Tesco
- Listed pack
- 510ml · 6 × 85ml
- Availability note
- Out of stock on the checked listing
- Retailer wording
- Vanilla flavour ice cream in a biscuit sandwich, dipped in milk chocolate
Declared structure-related ingredients
The retailer declaration begins with reconstituted dried skimmed milk and separately quantifies biscuit, coating and chocolate-chip components.
HonourFood protocol HF-MELT-001
A repeatable test—not a sunny-day photograph.
Designed as a consumer-accessible pilot. A food scientist should review the protocol before it is described as validated.
- 1
Lock identity
Record GTIN, market, shop, purchase date, mass and five guided pack captures including lot/date.
- 2
Condition equally
Use at least three samples per product, held at the same measured freezer temperature for 24 hours.
- 3
Control the room
Record room temperature, humidity, airflow, surface and start time; avoid sun and outdoor exposure.
- 4
Measure the melt
Use a mesh and collection vessel; record first drip, drained mass, sample temperature, height and footprint at fixed intervals.
- 5
Blind the comparison
Code samples where practical and publish every replicate, including awkward or contradictory results.
- 6
Keep claims separate
Report thermal, structural, label and health findings independently. Invite manufacturer correction before a final named receipt.
GB and NI legal boundary
Do not import the US rule into a British or Northern Irish verdict.
The United States has a federal standard of identity for “ice cream”. Great Britain and Northern Ireland require separate jurisdiction checks; in each, the exact food name, total presentation and ingredient declaration must be assessed under the rules applicable to that pack and market.
A simple historic UK percentage threshold should not be repeated as current general law. “Dairy ice cream” also deserves a current territory-specific composition and fat-source review.
Use “the retailer currently describes this as…” until the exact physical legal name and applicable jurisdiction have been captured.

Have one of these packs?
A front, back, ingredients, nutrition, barcode and lot/date capture can turn a retailer lead into an exact-pack record. Submission remains private until reviewed.
